Tour de Pointe
Every July the Tour de France starts it run through the towns and mountains of France. At Fitness Pointe, our members got a feel of the race excitement by participating in the Tour de Pointe that was held from
July 14th through July 20th.
While attending cycling classes, members were able to form teams and experience the different stages of the race which included mountains, time trials, and sprints to the finish. In each class, members were awarded yellow, green, and red polka dot jerseys that represented their outstanding efforts at climbing, sprinting, and overall cycling. Team awards were given for the most mileage covered and overall endurance.
If you were a part of this year's activities, Thank You for making the Tour de Pointe an exciting week. If you missed this year's Tour, then it's never too early to start cycling classes and get prepared to race in next year's event. Recipe of the Month
Fruit Salad with Limoncello
- 7 ounces Greek yogurt (recommended: Fage Total)
- 1/3 cup good bottled lemon curd
- 1 tablespoon honey
- 1/4 teaspoon pure vanilla extract
- 2 cups sliced strawberries (1 pint)
- 1 cup raspberries (1/2 pint)
- 1 cup blueberries (1/2 pint)
- 2 tablespoons sugar
- 3 tablespoons limoncello liqueur
- 1 banana, sliced
- Fresh mint springs
For the lemon yogurt topping, whisk together the yogurt, lemon curd, honey, and vanilla and set aside at room temperature.
For the fruit salad, carefully toss together the strawberries, raspberries, blueberries, sugar, and limoncello. Allow them to stand at room temperature for about 5 minutes to let the berries macerate with the sugar and liqueur. Gently fold the banana into the mixture.
Serve bowls of fruit with a dollop of lemon yogurt on top. Top each with a sprig of fresh mint.
