American Diabetes Month
| | click to visit website | Nearly 26 million children and adults in the United States have diabetes. Another 79 million Americans have prediabetes and are at risk for developing type 2 diabetes. Recent estimates project that as many as 1 in 3 American adults will have diabetes in 2050 unless we take steps to control diabetes. The cost of caring for someone with diabetes is $1 out of every $5 in total healthcare cost. So it is important for each of us to take steps to prevent or manage diabetes.
Take control of your health by keeping doctor appointments, exercising regularly, making healthy food choices, maintaining a healthy weight and managing your stress. Have your glucose, blood pressure and cholesterol checked. Eat a healthy high fiber diet, that includes more beans, whole grains and vegetables. Reduce your intake of white bread, sweets, pastries and desserts. Use high fiber breads, whole grain pasta, high fiber cereals and plenty of salads. Diabetes Management classes are offered at Fitness Pointe throughout the month. EAT SMART DAY COMING TO
FITNESS POINTE
Come join in on the activities for the
second annual EAT SMART DAY on
Monday, November 12th.
This all day event will feature interactive display tables to increase your awareness of healthy eating selections and how your food choices can affect your overall health. To test your knowledge and be eligible for prizes be sure to complete the quiz.
This year we have increased the FREE one hour lectures to include:
9 a.m.-
Cholesterol Control and Nutrition
11 a.m.-
(Pre) & Diabetes Healthy Eating Tips
1 p.m.-
MyPlate Healthy Eating
6p.m.- MyPlate Healthy Eating (repeat lecture)

Recipe of the Month
Sweet Potato Casserole 
From EatingWell: Fall 2004, The EatingWell Diabetes Cookbook (2005)
This scrumptious sweet potato casserole gets fabulous flavor from honey and freshly grated orange zest rather than the traditional stick of butter. To complete the healthy makeover we sprinkle a crunchy pecan streusel spiked with orange juice concentrate over the top. You can save the marshmallows for s'mores.
Ingredients
- 2 1/2 pounds sweet potatoes, (3 medium), peeled and cut into 2-inch chunks
- 2 large eggs
- 1 tablespoon canola oil
- 1 tablespoon honey
- 1/2 cup low-fat milk
- 2 teaspoons freshly grated orange zest
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Topping
- 1/2 cup whole-wheat flour
- 1/3 cup packed brown sugar
- 4 teaspoons frozen orange juice concentrate
- 1 tablespoon canola oil
- 1 tablespoon butter, melted
- 1/2 cup chopped pecans
Preparation
- Place sweet potatoes in a large saucepan and cover with water. Bring to a boil. Cover and cook over medium heat until tender, 10 to 15 minutes. Drain well and return to the pan. Mash with a potato masher. Measure out 3 cups. (Reserve any extra for another use.)
- Preheat oven to 350°F. Coat an 8-inch-square (or similar 2-quart) baking dish with cooking spray.
- Whisk eggs, oil and honey in a medium bowl. Add mashed sweet potato and mix well. Stir in milk, orange zest, vanilla and salt. Spread the mixture in the prepared baking dish.
- To prepare topping: Mix flour, brown sugar, orange juice concentrate, oil and butter in a small bowl. Blend with a fork or your fingertips until crumbly. Stir in pecans. Sprinkle over the casserole.
- Bake the casserole until heated through and the top is lightly browned, 35 to 45 minutes.

- Make Ahead Tip: Prepare through Step 4; cover and refrigerate for up to 2 days.

Healthy Food Drive
In conjunction with the Eat Smart Day on November 12th we will be kicking off a Healthy Food Drive to support a local community food bank. Healthy donation options are strongly suggested but we will accept any non-perishable food items.
There will be a donation box in the lobby area of Fitness Pointe along with one in Cardiac Rehab. There will also be a list of suggested healthy items to donate on each box for you to reference.
This drive will run from
Nov. 12 to Nov. 18.
